Ingredients
Scale
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup chopped nuts (optional, and you can substitute with dried fruits)
- 1 large egg
Feel free to get creative with substitutions. If you’re like my mom, who could whip magic out of a can of tomatoes, try swapping in what you have on hand. Perhaps a splash of almond extract instead of vanilla, or white chocolate chips for a different twist.
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy. This should take about 3-4 minutes, and here’s a tip I learned from my dad—let the stories flow as you stir!
- Add the egg and vanilla extract, mixing until well combined.
- Gradually add in the flour and salt, mixing just until the dough comes together. Be gentle with this step; as my mom always said, “Too much mixing can steal the magic.”
- Fold in the chocolate chips and nuts (if using) with a spatula.
- Scoop tablespoon-sized portions onto the prepared baking sheet, leaving about 2 inches between each one.
- Bake for 12-15 minutes or until the edges are golden brown. The aroma that fills your kitchen will be a reminder of why we cook with love.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
