- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach leaves
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano

- 1/2 lemon, juiced

If you don’t have fresh spinach, frozen works just as well. And if feta isn’t your favorite, you can substitute it with goat cheese for a tangier flavor. This recipe is flexible, just like home cooking should be!
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish with a bit of olive oil.
- Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness, about 1/2 inch thick. This ensures even cooking.
- In a small bowl, mix together the spinach, feta cheese, garlic powder, oregano, salt, and pepper.
- Lay each chicken breast out flat. Spread a quarter of the spinach and feta mixture over each piece of chicken.
- Roll the chicken tightly, securing it with toothpicks or kitchen twine. It’s a bit like rolling up a sleeping bag – snug and secure!
- Place the rolled chicken in the prepared baking dish. Drizzle with olive oil and lemon juice to keep it moist and flavorful.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and juices run clear.
- Let the chicken rest for a few minutes before slicing. This helps keep all those lovely juices inside.
