Ingredients
Scale
- 2 cups long-grain white rice
- 4 tablespoons unsalted butter
- 2 large onions, thinly sliced
- 4 cups beef broth (or chicken broth for a milder flavor)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme (optional, for extra depth)
- 1/2 cup grated Parmesan cheese (optional, for garnish)
Feel free to substitute with what you have on hand. If you’re out of beef broth, chicken broth works just as well, and you can skip the thyme if it’s not your thing. The beauty of home cooking is making it work with what you’ve got!
Instructions
- In a large skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 10-12 minutes. This is where the magic happens, so let them get nice and soft.
- Add the rice to the skillet, stirring to coat it in the butter and onions. Toast the rice for about 2 minutes, letting it soak up all those delicious flavors.
- Pour in the beef broth, then season with salt, pepper, and thyme if you’re using it. Stir everything together, scraping up any brown bits from the bottom of the skillet for extra flavor.
- Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 15 minutes, or until the rice is cooked through and tender.
- Once cooked, fluff the rice with a fork, and if you’re feeling indulgent, sprinkle the Parmesan cheese on top before serving.
Cooking is a journey, not a sprint. Let those onions take their time to caramelize; your patience will be rewarded with deep, rich flavors that make this dish special.
