- In a medium bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt. Mix until smooth.
- Gently fold in the diced strawberries. Be careful not to crush them; you want nice, juicy bites throughout.
- Line a baking tray with parchment paper or use a silicone mold for fun shapes. I often use silicone molds shaped like stars or hearts for a bit of whimsy.
- Spoon the yogurt mixture into the molds or drop spoonfuls onto the parchment-lined tray.
- Place the tray or molds in the freezer for at least 2 hours, or until the bites are completely frozen.
- Once frozen, remove from the molds or break off the parchment paper and store in an airtight container in the freezer.
