- 12 ounces of spaghetti or your favorite pasta
- 6 slices of bacon, chopped
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional for a bit of heat)
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped fresh parsley for garnish
If you’re missing a few items, don’t fret. Pancetta can replace bacon, or you can use whole wheat pasta for a healthier twist. And if parsley isn’t your thing, basil makes a great alternative.
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain, reserving 1 cup of pasta water, and set aside.
- In a large skillet over medium heat, cook the chopped bacon until crispy. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, leaving the bacon fat in the skillet.
- Add the butter to the skillet. Once melted, stir in the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until fragrant, but be careful not to burn the garlic—trust me, burnt garlic is not the vibe we’re going for.
- Return the pasta to the skillet, tossing it with the garlic butter sauce. Gradually add the reserved pasta water, stirring until the pasta is well coated and glossy.
- Stir in the crispy bacon and Parmesan cheese. Season with salt and pepper to taste. If your kids are anything like mine, more cheese is always better!
- Garnish with chopped parsley and serve immediately. Gather your family around and enjoy the simplicity of a meal made with love.
