- 1 pound chicken breast, cut into bite-sized pieces
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 8 ounces pasta of your choice (I love using penne)
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- Lemon wedges (optional, for serving)
If you’re missing Italian seasoning, a mix of dried basil and oregano works just as well. And if you’re not a fan of Parmesan, feel free to swap it out for another hard cheese you enjoy.
Instructions
- Start by cooking the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, seasoning them with salt, pepper, and Italian seasoning. Cook until golden brown and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set it aside. In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté until fragrant, about 1 minute.
- Return the chicken to the skillet, tossing it in the garlic butter until well-coated.
- Add the cooked pasta to the skillet, along with the Parmesan cheese and parsley, tossing everything together until the cheese is melted and the pasta is heated through.
- Serve immediately, with a squeeze of lemon if desired, for a bright, fresh touch.
One of my favorite things to do is to add a little extra butter at the end for that glossy finish. It’s a tip I picked up from watching dad cook—always go a little overboard on the flavor!
