Gathering ingredients shouldn’t feel like a scavenger hunt. Here’s what you need:
- 1 pound of ribeye steak, thinly sliced
- 2 tablespoons of olive oil
- 1 tablespoon of unsalted butter
- 3 cloves of garlic, minced
- 1 large onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 cup of mushrooms, sliced
- ½ teaspoon of salt
- ¼ teaspoon of black pepper
- 1 cup of provolone cheese, shredded
- Cooked rice or quinoa, for serving
Feel free to swap ribeye for flank steak or even chicken if you prefer. The provolone can be replaced with mozzarella or cheddar based on what’s in your fridge.
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced steak and season with salt and pepper. Cook until browned, about 3-4 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining olive oil and butter. Once the butter has melted, add the garlic and cook until fragrant, about 30 seconds.
- Add the onions, bell peppers, and mushrooms to the skillet. Sauté until the vegetables are tender and the onions are caramelized, about 8-10 minutes.
- Return the steak to the skillet, stirring to combine with the vegetables. Reduce the heat to low, sprinkle the cheese over the mixture, and cover until the cheese has melted, about 2 minutes.
- Serve over a bed of your choice of rice or quinoa. Enjoy the comforting flavors that bring your kitchen to life!
