- Pat the salmon cubes dry with paper towels and season with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat until shimmering.
- Add the salmon cubes to the skillet in a single layer. Sear for 2-3 minutes, until golden brown, then flip and sear the other side for another 2 minutes.
- Reduce the heat to medium and add the butter to the skillet. As it melts, add in the minced garlic, stirring gently to avoid burning.
- Pour the lemon juice over the salmon and gently toss to coat each piece in the garlic butter sauce.
