  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

Gather these ingredients to create magic in your kitchen:

  • 4 large russet potatoes
  • 1 lb shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • Olive oil, for drizzling
  • Lemon wedges for serving (optional)

Feel free to make substitutions based on what you have at hand. No Parmesan? Try some cheddar. Out of heavy cream? Milk can work in a pinch. Remember, it’s about working with what you’ve got!

Instructions

Let’s get cooking! Follow these steps to bring your Garlic Butter Shrimp Stuffed Potatoes to life:

  1. Preheat your oven to 400°F (200°C). Scrub the potatoes clean, poke them several times with a fork, and place them on a baking sheet. Drizzle with olive oil and sprinkle with a pinch of salt. Bake for about 50-60 minutes, until the potatoes are tender and the skins are crispy.
  2. While the potatoes are baking, melt 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  3. Add the shrimp to the skillet and season with salt and pepper. Cook, stirring occasionally, until the shrimp are pink and cooked through, about 3-4 minutes. Remove from heat and set aside.
  4. Once the potatoes are done, let them cool for a few minutes. Carefully cut each potato in half lengthwise and scoop out the flesh into a mixing bowl, leaving a thin shell.
  5. To the potato flesh, add the remaining butter, heavy cream, Parmesan cheese, and a bit of salt and pepper. Mash until smooth and creamy.
  6. Fold the cooked shrimp and garlic butter mixture into the mashed potatoes, along with half of the chopped parsley.
  7. Spoon the shrimp and potato mixture back into the potato shells, mounding it nice and high.
  8. Place the stuffed potatoes back on the baking sheet and return them to the oven for another 10-15 minutes, until the tops are golden and bubbly.
  9. Sprinkle with the remaining parsley and serve with lemon wedges if desired. Enjoy the deliciousness that is Garlic Butter Shrimp Stuffed Potatoes!
