Sizzle and Smash: Irresistible Garlic Butter Steak Bites with Cheesy Smashed Potatoes

Learn how to make delicious Garlic Butter Steak Bites and Cheesy Smashed Potatoes. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

Here’s everything you’ll need to bring this delightful meal to life:

  • 1.5 pounds of sirloin steak, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1.5 pounds baby potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tablespoons chives, chopped (optional)

If you don’t have sirloin, feel free to substitute with another tender cut like ribeye or tenderloin. For a lighter version, swap out the cheddar for a part-skim mozzarella. Flexibility is key in a busy kitchen!

Instructions

  1. Start by boiling the baby potatoes in a large pot of salted water until they’re fork-tender, about 20 minutes. Drain and let them cool slightly.
  2. While the potatoes are boiling, heat olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer, making sure not to overcrowd the pan, and sear for about 3 minutes on each side until browned. Remove the steak from the pan and set aside.
  3. In the same skillet, reduce the heat to medium and add the butter. Once melted, stir in the garlic, cooking until fragrant, about 1 minute. Return the steak bites to the skillet and toss to coat in the garlic butter. Season with salt and pepper to taste. If you like a bit of freshness, sprinkle with parsley.
  4. Preheat your oven to 400°F. Place the boiled potatoes on a baking sheet and gently smash them with the back of a fork or a potato masher. Drizzle them with some olive oil, sprinkle with salt and pepper, and bake for 15 minutes until crispy.
  5. Remove the potatoes from the oven and sprinkle the cheddar cheese over them. Return to the oven for about 5 minutes, or until the cheese is bubbly and melted.
  6. Once out of the oven, top the cheesy potatoes with sour cream and a sprinkle of chives for an extra pop of flavor.

There you have it—a meal that comes together with ease, yet feels like a gourmet experience. Just like those magical meals my mom used to whip up in our tiny kitchen.
