- 1 pound chicken breast, diced
- 1 package (16 ounces) gnocchi
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (optional for garnish)
- Substitution Tip: Swap chicken breast for chicken thighs if you prefer darker meat.
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced chicken, season with salt and pepper, and cook until golden brown, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, melt the butter and add the gnocchi. Sauté until the gnocchi is golden and crispy on the outside, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant. This step always reminds me of my dad’s stories, where garlic was the hero in every dish.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer and let it cook for 2-3 minutes, allowing the sauce to thicken slightly.
- Return the chicken to the skillet, add the dried thyme, and sprinkle with Parmesan cheese. Stir everything together until well combined and heated through.
