- 12 ounces spaghetti
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup freshly grated Parmesan cheese
- 1/2 cup reserved pasta water
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
If you’re out of Parmesan, feel free to substitute with Pecorino Romano for a sharper flavor. For a gluten-free option, swap the spaghetti with your favorite gluten-free pasta.
Instructions
Follow these simple steps to get dinner on the table in no time:
- Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to let it burn.
- Reduce the heat to low and return the spaghetti to the pot. Toss the pasta with the garlic oil until well coated.
- Gradually add the Parmesan cheese, tossing continuously until the cheese melts and the spaghetti is well coated. If the pasta seems dry, stir in the reserved pasta water a little at a time until you reach your desired consistency.
- Season with salt and pepper to taste. Serve warm, garnished with fresh parsley if desired.
