- 2 large sweet potatoes, washed and cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley for garnish
Feel free to swap the parsley for cilantro if that’s what you have on hand, or even basil for a slightly different flavor profile. The beauty of home cooking is in these little tweaks that make a recipe your own.
Instructions
- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, and pepper. Stir until well mixed.
- Add the sweet potato wedges to the bowl and toss them until they are well coated with the seasoning mixture. This is the part where my little helpers usually join in, each taking turns to make sure every wedge is covered.
- Spread the wedges in a single layer on the prepared baking sheet. This ensures they bake evenly and get that nice crispy edge.
- Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the wedges are golden brown and tender. You’ll know they’re done when the edges are crisp and the insides are soft.
- Remove from the oven and immediately sprinkle the Parmesan cheese over the hot wedges, allowing it to melt slightly.
- Garnish with fresh parsley before serving. For an extra touch, I sometimes add a squeeze of lemon juice right before serving—it adds a lovely brightness.
