- 1 pound of sirloin steak, cut into 1-inch cubes
- 1.5 pounds of baby potatoes, halved
- 3 tablespoons of olive oil, divided
- 4 cloves of garlic, minced
- 1 teaspoon of smoked paprika
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- 2 tablespoons of fresh parsley, chopped (optional)
Feel free to substitute the sirloin with another cut of beef you have on hand. If you’re out of baby potatoes, regular potatoes cut into chunks work just as well. It’s all about making what you have work for you!
Instructions
- Preheat your oven to 400°F (200°C). This step ensures that everything cooks evenly and crisps up nicely.
- In a large bowl, toss the halved potatoes with 2 tablespoons of olive oil, garlic, smoked paprika, thyme, salt, and pepper. Spread them out on a large baking sheet in a single layer.
- Roast the potatoes in the preheated oven for about 20 minutes. Meanwhile, in the same bowl (because who needs more dishes?), toss the steak cubes with the remaining tablespoon of olive oil, a pinch of salt, and pepper.
- After 20 minutes, turn the potatoes and make room for the steak cubes on the baking sheet. Return to the oven and cook for another 10-15 minutes, or until the potatoes are golden and the steak is cooked to your liking.
- Sprinkle with fresh parsley before serving for a pop of color and flavor. Serve immediately and enjoy!
