  • 1 egg, beaten (for egg wash)
  • A pinch of salt
  • A pinch of black pepper
  • 1 tablespoon of chopped walnuts or pecans (optional, for added crunch)

Feel free to substitute the walnuts with almonds if that’s what you have on hand, or skip the nuts altogether if you prefer nut-free bites. The thyme is optional, but I find it adds a lovely depth that reminds me of the herb garden we had on our tiny balcony when I was growing up.

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the goat cheese, honey, thyme leaves, salt, and pepper. Stir until smooth and well combined. If you’re like me and love a hint of crunch, add in the chopped walnuts.
  3. Roll out the puff pastry on a lightly floured surface to smooth out any creases. Cut the pastry into 2-inch squares.
  4. Place a small spoonful of the cheese mixture in the center of each square. Fold the corners of the pastry over the filling to form a neat package, pinching the edges to seal.
  5. Transfer the bites to the prepared baking sheet, and brush the tops with beaten egg for a beautiful golden finish.
  6. Bake for about 15-18 minutes until the pastry is puffed and golden brown.
  7. Allow the bites to cool slightly before drizzling with a bit more honey for an extra touch of sweetness.
