- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons all-purpose flour
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 cup beef stock
- 1 cup red wine (or extra beef stock if you prefer)
- 2 tablespoons tomato paste
- 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)
- 1 bay leaf
- 1 sheet puff pastry, thawed
- 1 egg, beaten
Feel free to substitute the red wine with extra beef stock for a non-alcoholic version, or add a splash of Worcestershire sauce for an extra depth of flavor.
Instructions
- Preheat your oven to 375°F (190°C) to ensure it’s hot and ready for the pie.
- In a large bowl, combine the beef cubes with flour, salt, and pepper, tossing to coat evenly.
- Heat olive oil in a large ovenproof pot over medium-high heat. Brown the beef in batches, ensuring not to overcrowd the pan, and set aside.
- In the same pot, add onions and garlic, sautéing until soft and fragrant, about 5 minutes.
- Stir in tomato paste, cooking for an additional minute until it darkens slightly, enhancing its flavor.
- Add the beef back to the pot along with beef stock, red wine, thyme, and bay leaf. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
- Cover the pot with a lid and transfer it to the oven, cooking for 1.5 to 2 hours, or until the beef is tender and the sauce has thickened.
- Remove the pot from the oven and let it cool slightly. Increase the oven temperature to 400°F (200°C).
- Transfer the beef mixture into a pie dish. Roll out the puff pastry on a lightly floured surface and lay it over the pie filling, trimming any excess. Crimp the edges to seal.
- Brush the pastry with beaten egg to achieve a golden, glossy finish.
- Place the pie dish on a baking sheet and bake for 25-30 minutes, or until the pastry is puffed and golden.
