- 1 pound ground beef
- 1 cup orzo pasta
- 1 medium onion, finely chopped

- 1 can (14.5 ounces) diced tomatoes
- 2 cups beef broth
- 1 teaspoon dried oregano

- 1 tablespoon olive oil

- 1/4 cup crumbled feta cheese (optional)

Feel free to swap ground beef with turkey or lamb for a different twist. And if you’re out of beef broth, chicken broth works just as well. This dish is forgiving, and a little creativity never hurt anyone!
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant. This step always reminds me of my mom’s magic touch with just a few simple ingredients.
- Add the ground beef to the skillet. Cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes.
- Stir in the oregano, thyme, salt, and pepper. Let the spices mingle with the beef for about 1-2 minutes.
- Add the can of diced tomatoes and the beef broth. Bring the mixture to a simmer.
- Stir in the orzo pasta. Cover and let it cook, stirring occasionally, until the orzo is tender and has absorbed most of the liquid, about 10-12 minutes.
- Once done, remove from heat and let it sit for a couple of minutes to thicken. If you’re feeling indulgent, sprinkle some crumbled feta on top.
