- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup soy sauce
- 3 tablespoons honey
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon grated fresh ginger
- 2 garlic cloves, minced
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 bunch of green onions, cut into 1-inch pieces
- Wooden or metal skewers
Feel free to substitute chicken thighs for the chicken breasts if you prefer a juicier texture. And if sesame oil isn’t in your pantry, a light olive oil works too.
Instructions
- In a large bowl, whisk together the soy sauce, honey, sesame oil, rice vinegar, ginger, garlic, and red pepper flakes.
- Add the chicken cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours if you have the time. This is a great moment to grab a cup of tea or tackle a short chore!
- Soak your wooden skewers in water for at least 15 minutes if you’re using them, to prevent burning.
- Preheat your grill to medium-high heat. Thread the marinated chicken and green onions onto the skewers, alternating between them.
- Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and slightly charred on the edges.
