- 1 pre-made pizza crust (store-bought or homemade, your choice!)
- 1 cup cooked chicken breast, shredded (grilled or rotisserie works great)
- 1/2 cup barbecue sauce (use your favorite brand or make your own!)
- 1 cup shredded mozzarella cheese
- 1/2 cup red onion, thinly sliced
- 1/4 cup cilantro, chopped (optional, but adds a fresh touch)
- 1 tablespoon olive oil
- Salt and pepper to taste
Substitution suggestions: If you’re out of mozzarella, cheddar or a blend of Italian cheeses can be a great alternative. No cilantro? Fresh parsley can add a nice pop of color and flavor.
Instructions
- Preheat your grill to medium-high heat, around 400°F. Brush the grill grates with a little oil to prevent sticking.
- Roll out the pizza dough on a lightly floured surface, if using homemade. Brush one side with olive oil.
- Place the dough oil-side down onto the grill. Close the lid and cook for about 2-3 minutes until bubbles form on the surface and grill marks appear underneath.
- Flip the crust using tongs. Spread the barbecue sauce evenly over the cooked side of the crust.
- Top with shredded mozzarella cheese, cooked chicken, and red onion slices. Season with a little salt and pepper.
- Close the grill lid and cook for another 3-4 minutes, or until the cheese is melted and bubbly.
- Remove from the grill and sprinkle with fresh cilantro if using. Slice and serve while hot.
Tip from my kitchen: If you’re using a charcoal grill, keep the coals on one side of the grill and cook the pizza over the indirect heat to avoid burning the crust.
