- 1/4 cup fresh lemon juice
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 teaspoon ground black pepper
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika (optional for a smoky kick)
- 1/2 teaspoon salt
- 4 boneless, skinless chicken breasts
Feel free to substitute fresh lime juice for lemon juice if you prefer a slightly different tangy note. And if you’re out of honey, maple syrup works as a great alternative!
Instructions
- In a medium bowl, whisk together olive oil, soy sauce, lemon juice, honey, garlic, black pepper, oregano, smoked paprika, and salt. Ensure everything is well combined and the honey is dissolved.
- Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 8 hours for more intense flavor.
- Preheat your grill to medium-high heat. If you’re using a charcoal grill, wait until the coals are white-hot.
- Remove the chicken from the marinade, letting the excess drip off. Discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. You’ll know it’s perfect when the juices run clear, and there are beautiful grill marks.
- Let the chicken rest for a few minutes before slicing. This helps the juices redistribute, ensuring every bite is juicy and flavorful.
