Instructions
- In a large bowl, combine the flour and salt. If using, add the garlic powder or herbs.
- Stir in the warm water and oil, mixing until a soft dough forms.
- Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth and elastic. This is a great time to get the kids involved, letting them feel the dough change under their hands.
- Divide the dough into 8 equal pieces and roll each piece into a ball. Cover them with a clean kitchen towel and let them rest for 15 minutes.
- Preheat a non-stick skillet over medium-high heat. Meanwhile, roll each dough ball into a thin circle, about 8 inches in diameter.
- Place one tortilla at a time into the hot skillet. Cook for about 1 minute on each side, or until they are golden with a few charred spots. My dad used to say those spots were like love notes from the pan.
- Keep the cooked tortillas warm in a towel as you finish the rest.
