- 1 ½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup pineapple juice
- ⅓ cup soy sauce
- ¼ cup brown sugar
- 3 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 2 tablespoons olive oil
- 1 large red bell pepper, cut into 1-inch pieces
- 1 large green bell pepper, cut into 1-inch pieces

- In a medium bowl, whisk together pineapple juice, soy sauce, brown sugar, garlic, ginger, and olive oil. This will be your marinade.
- Place the chicken cubes into a large resealable plastic bag or a shallow dish and pour the marinade over the chicken. Seal or cover and refrigerate for at least 30 minutes, or overnight for more flavor.
- Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for about 20 minutes to prevent burning.
- Thread the marinated chicken, bell peppers, and pineapple chunks alternately onto the skewers.
- Grill the kabobs for 12-15 minutes, turning occasionally, until the chicken is cooked through and has a slight char. Keep an eye on them to avoid overcooking, just like my dad always reminded me with his pots of lentils.
