Ingredients
Let’s get down to what you’ll need to bring these delightful skewers to life. Don’t worry; you won’t need a pantry full of exotic ingredients. Here’s what you’ll need:
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 large red bell pepper, cut into 1-inch pieces
- 1 large green bell pepper, cut into 1-inch pieces
- 1 large yellow bell pepper, cut into 1-inch pieces
- 2 cups fresh pineapple chunks
- 1/2 cup soy sauce
- 1/4 cup honey
- 1/4 cup rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- Skewers (if using wooden skewers, soak them in water for 30 minutes prior)
If you’re missing an ingredient, don’t fret! Swap out bell peppers for whatever veggies you have on hand, or use canned pineapple if fresh isn’t available. This recipe is as flexible as a yoga instructor on a good day.
Instructions
Let’s get cooking! Here’s how you can make your own Hawaiian Chicken Skewers at home:
- In a large bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger. Add the chicken cubes and toss to coat. Cover and marinate in the fridge for at least 30 minutes, or up to 4 hours if time allows.
- Preheat your grill to medium-high heat. If you’re using a grill pan indoors, set it over medium-high heat on your stovetop.
- Thread the marinated chicken, bell peppers, and pineapple chunks onto the skewers, alternating for a colorful presentation.
- Grill the skewers for about 8-10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
- Brush the skewers with the remaining marinade during the last few minutes of grilling for extra flavor.
A little tip from my kitchen: If you’re grilling inside, open a window or two to keep the smoky aromas from taking over. And, oh, the stories I could tell about smoke alarms and curious kids!
