- 1 pound ground beef (or turkey for a leaner option)
- 4 medium potatoes, thinly sliced
- 1 cup chopped onions
- 1 cup bell peppers, diced
- 2 cups fresh spinach
- 1 cup shredded cheddar cheese
- 1 can diced tomatoes (14 oz)
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Feel free to swap ingredients based on what’s available. Kale can replace spinach, and any type of cheese will do if you’re out of cheddar. This recipe is all about making it work with what you’ve got.
Instructions
- Preheat your oven to 375°F (190°C). Grease a large baking dish with olive oil.
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and set aside.
- Add onions and bell peppers to the skillet, sauté until they begin to soften, about 5 minutes.
- Stir in the spinach, allowing it to wilt slightly. Then, add the diced tomatoes, garlic powder, and smoked paprika. Cook for another 3 minutes.
- Layer half of the sliced potatoes on the bottom of the greased baking dish.
- Add the beef and vegetable mixture over the potatoes, spreading evenly.
- Top with the remaining potatoes and sprinkle with shredded cheese.
- Cover the dish with foil and bake for 40 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
