- 1 pound flank steak, thinly sliced
- 2 tablespoons olive oil, divided
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup cooked brown rice
- 1 can black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 red bell pepper, chopped
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- Juice of 1 lime
- 1/2 cup shredded cheese (optional)
- Salsa, for serving
Instructions
- In a small bowl, mix together the cumin, paprika, salt, and pepper. Rub this spice mixture all over the steak slices.
- In a large skillet, heat one tablespoon of olive oil over medium-high heat. Add the steak slices and cook for about 3-4 minutes on each side, or until they’re cooked to your liking. Remove from the pan and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Throw in the red bell pepper and corn, sautéing for about 5 minutes until slightly charred.
- Add the cooked brown rice and black beans to the skillet, stirring everything together until well combined and heated through, about 3-4 minutes.
- Remove the skillet from heat and stir in lime juice and cilantro, mixing until the flavors meld together.
- To assemble the bowls, divide the rice and bean mixture among four bowls. Top each with the cooked steak slices, avocado, and a sprinkle of cheese if using.
- Serve with a side of salsa and enjoy the vibrant flavors that bring a little warmth and love to your table.
