Ingredients
Scale
- 2 flatbreads or naan
- 1 cup cooked chicken breast, shredded
- 1/2 cup honey BBQ sauce
- 1 cup mozzarella cheese, shredded
- 1/4 cup red onion, thinly sliced
- 1/4 cup bell peppers, diced (any color you prefer)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Feel free to swap out the mozzarella for cheddar if you’re in a pinch, or add some heat with jalapeños for a spicy kick.
Instructions
- Preheat your oven to 400°F. If you’re like me and have a trusty oven that’s seen better days, give it a few extra minutes to get up to temperature.
- Place the flatbreads on a baking sheet lined with parchment paper for easy cleanup.
- In a small bowl, mix the olive oil with garlic powder, then brush this mixture over the flatbreads. This step brings a subtle, yet delightful flavor to the base.
- Spread the honey BBQ sauce evenly over the flatbreads, leaving about half an inch around the edges for a perfect crust.
- Top each flatbread with shredded chicken, making sure to distribute it evenly because nobody wants a bite without chicken!
- Sprinkle the mozzarella cheese on top, followed by the thinly sliced red onions and bell peppers.
- Bake in the oven for about 10-12 minutes, or until the cheese is bubbly and the edges are golden brown. This is when my kids usually come running into the kitchen, noses twitching with anticipation.
- Once out of the oven, let it cool for a minute or two before garnishing with fresh cilantro or parsley.
