- 2 cups all-purpose flour

- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup buttermilk
- 2 tablespoons honey
- 4 boneless, skinless chicken thighs
- 1 cup buttermilk (for marinade)
- 1 cup all-purpose flour (for dredging)
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup honey (for glaze)
- 2 tablespoons unsalted butter (for glaze)
- Oil for frying
For those with dietary restrictions, you can substitute the buttermilk with almond milk and a tablespoon of lemon juice. And if you’re out of chicken thighs, chicken breasts work just as well.
Instructions
- In a bowl, combine the buttermilk and chicken thighs. Let them marinate in the fridge for at least 30 minutes. This is a trick I learned from my mom—marinating adds depth to the chicken’s flavor.
- Preheat your oven to 425°F.
- In a large bowl, whisk together 2 cups of flour, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in the buttermilk and honey until just combined.
- Turn the dough onto a floured surface and gently knead it a few times. Roll out to about 1/2 inch thick and cut into biscuits using a biscuit cutter or any round object you have. Place biscuits on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until golden brown.
- While the biscuits are baking, heat oil in a frying pan over medium heat. In a shallow dish, mix 1 cup of flour, paprika, garlic powder, onion powder, salt, and pepper.
- Dredge each marinated chicken thigh in the seasoned flour, shaking off any excess.
- Fry the chicken for about 5-7 minutes on each side or until cooked through and crispy. Drain on paper towels.
- In a small saucepan, melt 2 tablespoons of butter and stir in 1/4 cup honey. Brush this glaze over the hot biscuits as they come out of the oven.
- Assemble the biscuits by slicing them open and placing a piece of crispy chicken inside. Drizzle with extra honey glaze if desired.
