  • 2 tablespoons honey
  • 4 boneless, skinless chicken thighs
  • 1 cup buttermilk (for marinade)
  • 1 cup all-purpose flour (for dredging)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup honey (for glaze)
  • 2 tablespoons unsalted butter (for glaze)
  • Oil for frying

For those with dietary restrictions, you can substitute the buttermilk with almond milk and a tablespoon of lemon juice. And if you’re out of chicken thighs, chicken breasts work just as well.

Instructions

  1. In a bowl, combine the buttermilk and chicken thighs. Let them marinate in the fridge for at least 30 minutes. This is a trick I learned from my mom—marinating adds depth to the chicken’s flavor.
  2. Preheat your oven to 425°F.
  3. In a large bowl, whisk together 2 cups of flour, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in the buttermilk and honey until just combined.
  4. Turn the dough onto a floured surface and gently knead it a few times. Roll out to about 1/2 inch thick and cut into biscuits using a biscuit cutter or any round object you have. Place biscuits on a baking sheet lined with parchment paper.
  5. Bake for 12-15 minutes or until golden brown.
  6. While the biscuits are baking, heat oil in a frying pan over medium heat. In a shallow dish, mix 1 cup of flour, paprika, garlic powder, onion powder, salt, and pepper.
  7. Dredge each marinated chicken thigh in the seasoned flour, shaking off any excess.
  8. Fry the chicken for about 5-7 minutes on each side or until cooked through and crispy. Drain on paper towels.
  9. In a small saucepan, melt 2 tablespoons of butter and stir in 1/4 cup honey. Brush this glaze over the hot biscuits as they come out of the oven.
  10. Assemble the biscuits by slicing them open and placing a piece of crispy chicken inside. Drizzle with extra honey glaze if desired.
