- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with olive oil.
- Season the chicken breasts with garlic powder, thyme, salt, and pepper on both sides.
- In a small bowl, mix the honey and balsamic vinegar until well combined.
- Arrange the chicken breasts in the prepared baking dish and drizzle the honey-balsamic mixture over them.
- Scatter the cranberries around the chicken. Cover the dish with aluminum foil.
- Bake for 25 minutes, then remove the foil and sprinkle the feta cheese over the chicken.
- Return to the oven and bake for another 10-15 minutes, or until the chicken is cooked through and the cheese is slightly melted.
- Garnish with fresh parsley before serving, if desired.
