- 2 large sweet potatoes, scrubbed and sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup honey
- 1 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- Optional: 1/4 teaspoon red pepper flakes for a bit of heat
If you’re out of feta, you can substitute with goat cheese for a creamier texture. And for those who crave a bit more sweetness, a drizzle of maple syrup can also do the trick!
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place the sweet potato rounds in a large bowl and drizzle with olive oil. Sprinkle with salt and black pepper, tossing to coat evenly.
- Arrange the sweet potato slices in a single layer on the prepared baking sheet. Bake for 20 minutes, flipping halfway through, until the edges begin to crisp and the centers are tender.
- Remove the baking sheet from the oven and drizzle the sweet potatoes with honey. Sprinkle the crumbled feta evenly over the rounds.
- Return to the oven for another 5 minutes, or until the feta is slightly melted and golden.
- Once out of the oven, garnish with chopped parsley and a sprinkle of red pepper flakes if desired.
