- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a large bowl, toss the cubed sweet potatoes with olive oil, salt, pepper, and paprika. Spread them evenly on the baking sheet.
- Roast the sweet potatoes in the oven for 20 minutes, stirring halfway through, until they start to soften.
- While the potatoes are roasting, slice the sausage into rounds. In a small bowl, whisk together honey, minced garlic, and soy sauce.
