- 1 pound flank steak, thinly sliced
- 1 tablespoon olive oil
- 3 tablespoons soy sauce
- 3 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon rice vinegar
- 2 cups cooked jasmine rice
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 2 green onions, chopped
- 1 tablespoon sesame seeds (optional)
Feel free to swap the broccoli for whatever veggie you have at the bottom of your fridge, and if you’re out of rice vinegar, a splash of apple cider vinegar works wonders too. Cooking is all about making it work with what you have.
Instructions
- Start by heating the olive oil in a large skillet over medium-high heat. Once it’s shimmering, add the sliced flank steak in a single layer. Let it sizzle undisturbed for about 2-3 minutes to get a nice sear.
- Flip the steak pieces and sear the other side for another 2 minutes. Remove the steak from the skillet and set aside.
- In the same skillet, reduce the heat to medium and add the minced garlic and grated ginger. Stir for about 30 seconds until fragrant.
- Pour in the soy sauce, honey, and rice vinegar. Stir everything together, letting it bubble and thicken slightly, about 2 minutes.
- Add the sliced bell pepper and broccoli florets, stirring to coat them in the sauce. Cook for about 5 minutes until the veggies are tender-crisp.
- Return the steak to the skillet, tossing it with the veggies and sauce. Cook for an additional minute, ensuring everything is well combined and heated through.
- Serve the steak and veggies over a bed of warm jasmine rice, topping with chopped green onions and sesame seeds if desired.
