- 1 lb chicken breast, cut into strips
- 2 tablespoons honey
- Juice of 2 limes

Instructions
Cooking doesn’t have to be a daunting task. Let’s keep it simple and delightful:
- In a medium bowl, whisk together honey, lime juice, olive oil, garlic, cumin, salt, and pepper. Add the chicken strips and let them marinate for at least 15 minutes.
- Heat a large skillet over medium heat. Once hot, add the chicken strips, cooking each side for about 4-5 minutes until golden and cooked through. Remove from the skillet and let them rest.
- In the same skillet, add a touch more olive oil if needed and toss in the cooked rice. Stir it around to soak up any leftover flavors in the pan.
- To assemble, start by placing a generous serving of rice on each plate. Next, layer the chicken strips on top.
- Add a good helping of diced avocado over the chicken, and sprinkle with fresh cilantro and jalapeño slices if using.
