Ingredients
Scale
- 1 pound salmon fillets, skin removed
- 2 tablespoons olive oil
- 3 tablespoons honey
- Juice of 2 limes
- 1 teaspoon lime zest
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 8 small flour or corn tortillas
- 1 cup shredded cabbage
- 1/4 cup chopped cilantro
- Lime wedges for serving
If you’re out of smoked paprika, no worries! Regular paprika or even a pinch of cayenne pepper can work wonders.
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- In a small bowl, whisk together the honey, lime juice, lime zest, garlic, cumin, smoked paprika, salt, and pepper. This will be your glaze.
- Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil and brush generously with the honey lime glaze.
- Bake in the preheated oven for about 12-15 minutes, or until the salmon flakes easily with a fork and the glaze has caramelized.
- While the salmon is baking, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, just until they’re pliable and slightly toasted.
- Once the salmon is done, flake it into bite-sized pieces with a fork.
- Assemble the tacos by placing a generous amount of salmon on each tortilla. Top with shredded cabbage and a sprinkle of cilantro.
- Serve with lime wedges on the side for an extra burst of citrus flavor.
And there you have it—an easy, flavorful meal ready in no time, perfect for those evenings when you’re short on time but still want a dinner full of love.
