Ingredients
Scale
- 1 pound shrimp, peeled and deveined
- 2 tablespoons honey
- 2 tablespoons fresh lime juice
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 8 small tortillas (corn or flour)
- Optional toppings: sliced avocado, chopped cilantro, shredded cabbage, crumbled queso fresco
Feel free to swap the shrimp for chicken or even tofu if you’re catering to different dietary needs. And if you’re missing an ingredient or two, don’t worry—improvisation is half the fun in home cooking!
Instructions
- In a medium bowl, whisk together the honey, lime juice, garlic, chili powder, cumin, olive oil, salt, and pepper.
- Add the shrimp to the bowl and toss to coat them evenly in the marinade. Let it sit for about 10 minutes. This is a great time to prep your toppings.
- Heat a large skillet over medium-high heat. Once hot, add the shrimp along with the marinade. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque.
- Warm the tortillas according to package instructions. You can do this directly over a gas flame for a slight charred effect, or in a dry skillet.
- Assemble the tacos by placing a few shrimp on each tortilla, followed by your choice of toppings.
As you cook, remember the mantra from my childhood kitchen: it’s not about perfection, it’s about love and creativity. Feel free to adjust the flavors to suit your preference—add a bit more lime if you like it tangy or another drizzle of honey if you crave sweetness.
