Ingredients
Scale
You don’t need a pantry full of exotic ingredients to make this dish shine. Here’s what you’ll need:
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 1 cup buttermilk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 cup honey
- 2 tablespoons hot sauce (adjust to taste)
- Vegetable oil for frying
- 2 cups cooked rice (white or brown, your choice)
- Your favorite vegetables (like broccoli, carrots, or bell peppers), steamed or roasted
Feel free to swap out the vegetables based on what’s in your fridge or what your family loves. Sometimes, I add a squeeze of lime over everything for an extra zing!
Instructions
Let’s get cooking! Follow these steps, and soon you’ll have a delicious meal ready to enjoy.
- Begin by preparing your chicken. Place the chicken breasts on a cutting board, and cover them with plastic wrap. Using a meat mallet, gently pound them to an even thickness to ensure even cooking.
- In a shallow bowl, mix the flour, salt, pepper, paprika, and garlic powder. In another bowl, pour the buttermilk.
- Dip each chicken breast in the buttermilk, then dredge them in the flour mixture, ensuring they’re well-coated. Let them rest on a wire rack for about 10 minutes to help the coating adhere better.
- Heat the vegetable oil in a large skillet over medium-high heat. Once hot, carefully place the chicken breasts in the oil, frying them for about 4-5 minutes on each side, or until golden brown and cooked through. Transfer them to a paper towel-lined plate to drain excess oil.
- In a small saucepan, combine the honey and hot sauce. Heat gently on low, stirring until well combined and warm. Drizzle this hot honey mixture over the crispy chicken.
- Assemble your bowls by adding a scoop of cooked rice, a portion of vegetables, and topping it with the crispy chicken. Drizzle any remaining hot honey sauce over the top for extra flavor.
I often find myself distracted by the kids or a ringing phone during this step, but remember: your kitchen, your rhythm! That’s the beauty of home cooking.
