- 4 Italian sausage links (mild or spicy, depending on your preference)
- 1 large onion, thinly sliced
- 2 bell peppers, sliced (use a mix of colors for visual appeal)
- 2 tablespoons olive oil
- 4 hoagie rolls
- 1 cup shredded mozzarella cheese
- 1 teaspoon dried oregano
- Salt and pepper to taste
- (Optional) Marinara sauce or hot mustard for serving
If you can’t find hoagie rolls, feel free to substitute with any sturdy sandwich roll. And for a vegan twist, swap the sausage for plant-based alternatives and use dairy-free cheese.
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the sliced onions and bell peppers, cooking until they become soft and caramelized, about 10-12 minutes. Stir occasionally to prevent sticking.
- While the veggies cook, preheat your oven to 350°F. Place the sausage links on a baking sheet and bake for 20-25 minutes, or until they are fully cooked and browned. Alternatively, you can grill them for a smokier flavor.
- Once the sausages are done, slice them lengthwise and add them to the skillet with the onions and peppers. Sprinkle with dried oregano, and season with salt and pepper to taste. Stir everything together to combine flavors.
- Slice the hoagie rolls and lay them open on a baking sheet. Spoon the sausage and vegetable mixture onto each roll, then top with shredded mozzarella cheese.
- Place the hoagies under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Keep a close eye to prevent burning.
- Remove from the oven and serve immediately, with optional marinara sauce or hot mustard on the side.
