Here’s what you’ll need to create this delightful dish. Don’t worry, I’ve included some handy substitutions in case you can’t find everything at your local store.
- 2 pounds goat meat, cut into chunks (substitute with lamb if necessary)
- 2 tablespoons Jamaican curry powder
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 scotch bonnet peppers, whole (reduce for less heat)
- 1 teaspoon fresh thyme leaves
- 2 cups coconut milk
- 1 cup chicken broth
- 2 potatoes, peeled and cubed
- Salt and pepper to taste
- 1 tablespoon lime juice
Instructions
- Start by seasoning the goat meat with salt, pepper, and half of the curry powder. Let it marinate for at least an hour, or overnight if you have the time.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they’re translucent.
- Add the garlic and ginger, stirring for about a minute until fragrant. This step always reminds me of the aroma that filled my childhood kitchen.
- Increase the heat to high, add the marinated goat meat, and brown on all sides. This should take about 5-7 minutes.
- Stir in the remaining curry powder, ensuring the goat meat is well-coated.
- Add the scotch bonnet peppers, thyme, coconut milk, and chicken broth. Bring to a simmer, then reduce the heat to low.
- Cover the pot and let it cook for about 1.5 to 2 hours, or until the meat is tender, stirring occasionally.
- About 30 minutes before the end of cooking, add the cubed potatoes to the pot.
- Once everything is cooked to perfection, remove the scotch bonnet peppers and stir in the lime juice.
- Taste and adjust the seasoning if necessary. Serve hot with your choice of sides.
