- 1 pound thinly sliced ribeye steak or beef of choice
- 1 tablespoon olive oil
- 1 medium green bell pepper, sliced
- 1 medium onion, sliced
- 2 cups shredded mozzarella cheese
- 1/2 cup cream cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups almond flour
- 2 large eggs
- 1 tablespoon baking powder
Feel free to substitute the ribeye with any other steak you prefer or have on hand. If you’re not a fan of mozzarella, provolone works just as well!

Ready to get cooking? Here’s how you can whip up these rolls in no time:
- Preheat your oven to 375°F and line a baking sheet with parchment paper.
- In a large skillet, heat olive oil over medium heat. Add the sliced steak and cook until browned, about 5 minutes. Remove the steak and set aside.
- In the same skillet, add the bell pepper and onion. Sauté until they’re soft and the onion is translucent, about 4 minutes.
- Return the steak to the skillet with the veggies. Stir in garlic powder, onion powder, salt, and black pepper. Mix well and set aside.
- In a microwave-safe bowl, combine mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring until the cheeses are melted and smooth.
- Add almond flour, eggs, and baking powder to the cheese mixture. Stir until a dough forms.
- On a piece of parchment paper, roll out the dough into a rectangle. Spread the steak mixture evenly over the dough.
- Carefully roll the dough, starting from one of the shorter sides, into a log. Slice into 8 pieces and place them on the prepared baking sheet.
- Bake for 20-25 minutes, or until golden brown. Let them cool slightly before serving.
