- 12 ounces of your favorite short pasta (like penne or fusilli)
- 3 cups fresh arugula, washed and dried
- 1/4 cup extra-virgin olive oil
- Juice and zest of 2 large lemons
- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
- Optional: 1/4 cup toasted pine nuts for added crunch
If you’re out of arugula, feel free to substitute with spinach for a milder flavor. And if pine nuts are not available, walnuts or almonds work just as well. This salad is all about flexibility and using what you have on hand.
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
- In a large bowl, combine the cooked pasta, arugula, and cherry tomatoes.
- In a small bowl, whisk together the olive oil, lemon juice, and lemon zest. Season with salt and pepper to taste.
- Pour the lemon dressing over the pasta mixture and toss until everything is well coated.
- Fold in the grated Parmesan and toasted pine nuts, if using. Give it a final toss to combine all ingredients evenly.
- Taste and adjust seasoning if necessary, adding more lemon juice or salt as desired.
