- 4 cod fillets (about 6 ounces each)
- 3 tablespoons unsalted butter
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- Lemon wedges for serving
If cod isn’t available, feel free to substitute with another mild white fish like haddock or tilapia. It’s all about using what you’ve got and making it work, just like my mom did with her pantry magic.
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
- In a small saucepan, melt the butter over low heat. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
- Remove the saucepan from the heat and stir in the lemon juice and zest. Add salt and pepper to taste.
- Place the cod fillets on the prepared baking sheet. Brush each fillet generously with the lemon butter mixture.
- Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork. This was a tip from my dad, who always knew the perfect moment to pull fish from the oven.
- Sprinkle chopped parsley over the baked cod before serving and add lemon wedges on the side for an extra zing.
