- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1/4 cup unsalted butter
- 3 cloves garlic, minced
- 1 cup chicken broth
- Juice of 2 lemons
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh thyme
- 1 tablespoon chopped fresh rosemary
- Lemon slices, for garnish (optional)
If you’re out of fresh herbs, dried ones will work too. Just remember to use about a third of the amount, as dried herbs are more potent.
Instructions
- Start by seasoning the chicken breasts with salt and pepper on both sides.
- Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for about 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, or until fragrant.
- Pour in the chicken broth and lemon juice, scraping up any brown bits from the bottom of the pan. This is where the magic happens—the brown bits are pure flavor!
- Bring the mixture to a simmer, then stir in the fresh herbs.
- Return the chicken breasts to the skillet, spooning the sauce over them. Let them simmer in the sauce for about 3-4 minutes to absorb all that flavor.
- Garnish with lemon slices if desired before serving.
