- 6 bone-in, skin-on chicken thighs
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 cup chicken broth
- Juice of 1 lemon (about 3 tablespoons)
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
If you’re out of fresh lemons, bottled lemon juice will work in a pinch. And if oregano isn’t your thing, feel free to swap it with thyme for a different herbal twist.

Ready to get cooking? Follow these steps to create your new favorite family dinner:
- Preheat your oven to 400°F (200°C). This gives us the crispy skin we all love.
- In a large oven-safe skillet over medium-high heat, melt 2 tablespoons of the butter. Add the chicken thighs, skin-side down, and sear until golden brown, about 5 minutes. Flip them over and cook for another 5 minutes. Remove the chicken from the skillet and set aside.
- Add the remaining tablespoon of butter to the skillet. Stir in the minced garlic and cook until fragrant, about 1 minute. Be careful not to burn the garlic!
- Pour in the chicken broth, lemon juice, and lemon zest, scraping up any bits from the bottom of the skillet. Stir in the oregano, salt, and pepper. Let the sauce simmer for 2-3 minutes to meld the flavors.
- Return the chicken to the skillet, skin-side up. Spoon some of the sauce over each thigh.
- Transfer the skillet to the preheated oven and bake until the chicken is cooked through, about 20 minutes. A meat thermometer should read 165°F (75°C) when inserted into the thickest part of the thigh.
- Once out of the oven, sprinkle with fresh parsley before serving.
