Ingredients
Scale
Gather these simple ingredients, and you’re on your way to a meal that’s both comforting and delightful:
- 1 whole chicken (about 4–5 pounds)
- 2 lemons, halved
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and pepper, to taste
If you find yourself short on fresh herbs, dried ones can work in a pinch—just remember, they’re more potent, so use about a third of the quantity.
Instructions
Here’s how you bring this comfort dish to life, with a few tips from my kitchen to yours:
- Preheat your oven to 425°F (220°C). This high heat will give the chicken a beautiful, crispy skin.
- Pat the chicken dry with paper towels. This step is crucial for ensuring that crispy skin we all love.
- In a small bowl, mix the olive oil, garlic, rosemary, thyme, and parsley. Add salt and pepper to taste.
- Rub the herb mixture all over the chicken, making sure to get under the skin where possible for extra flavor infusion.
- Place the halved lemons inside the cavity of the chicken. As the chicken roasts, the lemons will release their juices, keeping the meat moist and infusing it with flavor.
- Transfer the chicken to a roasting pan and place in the oven. Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10 minutes before carving. This resting period allows the juices to redistribute, making each bite tender and juicy.
