- 4 boneless, skinless chicken breasts
- 1 cup grated parmesan cheese
- 1 cup panko breadcrumbs
- 2 lemons, zested and juiced
- 2 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- In a shallow dish, combine the parmesan cheese, panko breadcrumbs, lemon zest, oregano, salt, and pepper.
- In a separate bowl, mix the melted butter, lemon juice, and minced garlic.
- Dip each chicken breast into the lemon butter mixture, ensuring it’s fully coated.
- Press the chicken into the parmesan breadcrumb mixture, coating both sides. Pat the mixture onto the chicken to help it adhere.
- Place the coated chicken breasts onto the prepared baking sheet. Drizzle any remaining lemon butter over the top.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is golden brown and cooked through, with an internal temperature of 165°F (74°C).
- Sprinkle with fresh parsley before serving, if desired.
