- 1 cup granulated sugar
- 1 large egg
- 1 tablespoon lemon zest (about 1 lemon)
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
If you’re out of fresh lemons, you can substitute with bottled lemon juice, but trust me, the fresh zest really makes a difference! And hey, if you’re feeling adventurous, you can swap out the vanilla extract for almond extract for a different twist.
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper. This is my favorite part, where the anticipation of warm cookies begins.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, cream the butter and sugar together until light and fluffy, about 3 minutes. This step is crucial for that melt-in-your-mouth texture.
- Add the egg, lemon zest, lemon juice, and vanilla extract to the butter mixture. Mix until well combined. The kitchen starts smelling like a citrus grove at this stage!
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, or your cookies might turn out a bit tough.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
