Decadent Delights: Discover Levain Bakery’s Irresistible Rocky Road Cookies

Learn how to make delicious Levain Bakery Rocky Road Cookies. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips
  • 1 cup mini marshmallows
  • 1/2 cup chopped walnuts (optional)

Feel free to swap out the walnuts for pecans or leave them out entirely if you have nut allergies. The essence of home cooking is making it work for you and your family’s needs—just as I’ve done countless times when a quick pantry raid was my only option.

Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper—trust me, it makes cleanup so much easier.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. This was always my favorite part as a kid, sneaking little puffs of cocoa dust into the air.
  3. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes. Remember to scrape down the sides of the bowl to ensure even mixing.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract, bringing a warm depth to the cookie base.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Avoid over-mixing to keep your cookies tender.
  6. Fold in the chocolate chips, mini marshmallows, and walnuts. This is where the magic happens, turning a basic dough into a rocky road masterpiece.
  7. Drop large spoonfuls of dough onto the prepared baking sheets, leaving space for spreading. I like to make them slightly larger for that authentic bakery feel.
  8. Bake for 12-15 minutes, or until the cookies are just set but still soft in the center. They’ll continue to firm up as they cool on the baking sheet.
  9. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack. Grab a glass of milk and enjoy the fruits of your labor!
