- 1 ½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon lemon juice
- Wooden skewers, soaked in water for 30 minutes
Feel free to substitute Italian seasoning with a mix of dried oregano and basil if that’s what you have on hand. Home cooking is about making do with what you have, just like my mom turned a can of tomatoes into a feast.
Instructions
- In a large bowl, combine olive oil, minced garlic, Parmesan cheese, Italian seasoning, salt, pepper, and lemon juice. Mix well to create a marinade.
- Add the cubed chicken to the bowl and toss until the pieces are well coated in the marinade. Let it sit for at least 30 minutes to soak up the flavors.
- Preheat your grill to medium-high heat. If you don’t have a grill, a grill pan works just as well!
- Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a little space between each piece for even cooking.
- Place the skewers on the grill, cooking for about 5-7 minutes on each side until the chicken is fully cooked and has a nice char.
- Remove skewers from the grill and let them rest for a few minutes before serving.
Grilling these skewers always takes me back to those summer evenings on the tiny balcony of our apartment, where my dad was the grill master, and I was the eager taste tester. Remember, the goal is deliciousness, not perfection.
