- 2 cups cooked jasmine rice
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 ripe mango, peeled and diced
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 red bell pepper, sliced
- 1/4 cup chopped green onions (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chicken pieces and season them with garlic powder, paprika, salt, and pepper.
- Cook the chicken for about 5-7 minutes, or until it’s golden brown and cooked through. Remove the chicken from the skillet and set it aside.
- In the same skillet, add the red bell pepper slices and sauté for 3-4 minutes until they are slightly softened.
- Return the chicken to the skillet, add the soy sauce, honey, and lime juice. Stir everything together until the chicken is well-coated and the flavors meld together, about 2 minutes.
- In a large bowl, combine the cooked jasmine rice, diced mango, and sautéed chicken mixture. Toss gently to combine.
- Sprinkle the chopped cilantro and green onions over the top before serving.
