Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy, about 3-4 minutes. This step reminds me of my dad’s gentle patience when stirring those big pots of lentils.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with the milk. Be sure to start and end with the flour mixture.
  6. Divide the batter in half. In one half, fold in the mango puree and in the other, fold in the strawberry puree. This step adds a beautiful color contrast that my kids love.
  7. Spoon a layer of mango batter into each cupcake liner, followed by a layer of strawberry batter. Use a toothpick to gently swirl the layers together for a marbled effect.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
