Ingredients
Scale
- 4 large sweet potatoes, peeled and cubed
- 6 slices of bacon, chopped
- 1/4 cup pure maple syrup
- 2 tablespoons olive oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/4 cup chopped pecans for added crunch
This ingredient list is all about balance—sweet, savory, and a bit of spice. Feel free to substitute turkey bacon if you’re looking to lighten things up, or use honey in place of maple syrup if that’s what you have on hand. Home cooking is about making it work with what you’ve got!
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a large baking dish.
- In a large mixing bowl, combine the sweet potatoes, olive oil, maple syrup, cinnamon, salt, and black pepper. Toss everything together until the sweet potatoes are well coated.
- Spread the sweet potatoes evenly in the prepared baking dish. Sprinkle the chopped bacon over the top.
- Roast in the oven for 30-35 minutes, or until the sweet potatoes are tender and the bacon is crispy. Stir the mixture halfway through cooking to ensure even roasting.
- If desired, sprinkle chopped pecans over the dish during the last 5 minutes of baking for an extra layer of texture.
- Remove from the oven and let it cool slightly before serving.
This is one of those dishes where the aroma will have everyone wandering into the kitchen, asking, “What’s cooking?” And the answer, my friend, is love—wrapped in bacon and sweet potatoes.
